BROTH
The magic of stock is that it contains important minerals in a form that is easy for the body to absorb.  These minerals include calcium, magnesium, phosphorus, silicon, sulphur and trace minerals.  Broth starts with bones, pieces of meat, vegetables, and pure water, boiled for several hours or all day (chicken & duck) or overnight (beef), strained and cooled into a nutritious gelatinous form that aids in digestion of proteins.  It even contains  material from cartilage and tendons like chondroitin sulphates and glucosamine for joint pain relief.

It is a necessity in cultures that do not use milk because only stock made from bones and dairy products provides calcium in a form that the body can easily assimilate.
